"But we could get three meals out of it," I explained to Michele as I tried to convince her that buying a foot-long slab of smoked salmon was a good idea.
"How much is it?" she asked skeptically.
"Thirteen dollars."
"You think we'll eat three meals of that in a week?" she asked analytically.
"We could have it for lunch today, with crackers, then a few days later we can look-up a dinner recipe, with smoked salmon as a main dish. There have got to be salmon main dish recipes."
"And the third portion?" she asked pragmatically.
"Give it to Alex."
"Fine," she answered, with more resignation than enthusiasm.
So that is how I came to discover Smoked Salmon Mini Pizzas. I found the recipe on a website dedicated to smoked salmon. It is quite simple: spread english muffins (we used the sourdough variety) with pizza sauce, sprinkle on a little (especially little for us) garlic powder, add cheese, a tomato slice and finally shredded smoked salmon.
Cook the little 'pizzas' in a toaster oven or under your broiler until the cheese melts, and serve immediately. Michele liked them hot a lot, but not hot she did not.
I thought they were great hot or cold, but I would, wouldn't I? Next time I'd like to add a few capers and a little onion. Good stuff!

Are you sick of salmon yet? I had salmon in a salad one day, pan seared with soy sauce and lemon that night, and then I had salmon for lunch the following day. I finally reached my tolerance for salmon, and I haven't had it for 3-days now.
Tomorrow, I might have some salmon. Mmm...
Tiff, we aren't big salmon eaters. We like an infrequent exposure to smoked salmon, but just can't get friendly with poached/grilled/seared/baked salmon.
We aren't as bad as the Lewis & Clark Expedition. They feasted on buffalo (10 pounds per man per day!) when they crossed the great plains, then starved as they crossed the mountains and ended up in the Washington/Oregon salmon country. Frantic for food, they gorged on salmon, got sick (of course), determined, incorrectly, that it was inedible, and paid indians for dogs to eat...for a long time.
Buzz and Jackie like smoked salmon, and I'm not going to spoil their repast by recounting what I just told you.
